Char has a rich, flavorful taste similar to Trout and Salmon with a fat content that is closer to a Sockeye Salmon. It has a mild, sweet, buttery taste with a finer flake than both Salmon and Trout. The fat content makes this fish particularly easy to cook. Char has a very delicate skin that is edible and crisps up beautifully.
